彭吉星，男，1987年生，助理研究員。2015年中國海洋大學醫藥學院藥物化學專業畢業獲得博士學位，同年入職中國水產科學研究院黃海水產研究所質檢室。
主要研究方向：1.海水養殖貝類中營養成分評價分析；2.基于代謝組學技術的貝類營養品質差異及代謝通路分析；3.海水貝類中呈味物質的研究；4.基于分子網格技術的海洋生物中活性天然產物的發現。
近期承擔課題：主持國家自然科學基金青年基金、山東省自然科學基金青年基金、黃海水產研究所基本科研業務費等課題，參與國家重點研發計劃子課題、國家自然科學基金面上項目、水科院基本科研業務費重點項目、標準制修訂項目等多項課題。
